Chicken Lettuce Cups with Black Rice and Watermelon Salad



Beautiful, simple yet delicious,

and what’s more, it doesn’t even need a

dressing so once made

it can be kept in the fridge

for several days and used

as a tasty lunch box filler too.










  • 2 cups of black rice

  • 2 tbs canola oil

  • 300g chicken mince

  • 2 cups diced watermelon

  • 3 spring onions, sliced

  • 6 iceberg lettuce leaf cups

  • 1/2 cup freshly squeezed orange juice

  • 1 tsp sesame oil

  • 1 tsp finely grated fresh ginger




1. I cooked the rice as per instructions on the packet.

















2. Heated oil in a pan and added chicken mince. Stir-fried the chicken for 5 minutes until it turned golden.

















3. Tossed the rice with watermelon, spring onions, and cooked chicken pieces together and spooned them into the lettuce cups. 

















4.Combined the orange juice, sesame oil and ginger and did some good shaking of the mixture and poured that over the salad as a dressing. 


Serve this salad nice and cold for a warm summer's day!
